They can be found in kitchens ranging from humble households to upscale restaurants. But what exactly is a Nghiến-Iron wood cutting board, and why is it so highly regarded? Let's delve into the world of Nghiến-Iron Wood from Northwest Vietnam!
What is Excentrodendron Tonkinense Nghiến-Iron Wood Cutting Board? The Nghiến-Iron wood cutting board is made from the Nghiến-Iron tree, a type of wood found predominantly in high-altitude regions like Sơn La, Hòa Bình, Điện Biên, Lai Châu. Known for its exceptional hardness and mechanical strength, Nghiến-Iron wood is a favored material for crafting handmade artistic items and furniture.
Nghiến" (scientific name Burretiodendron hsienmu) is a flowering plant species, formerly classified in the Tiliaceae family but now belonging to the subfamily Dombeyoideae of the Malvaceae family in a broader sense. Nghiến is found in Vietnam. This type of tree can be found in Phong Nha-Kẻ Bàng National Park in Quang Binh province.
Characteristics Nghiến trees are large hardwood trees, reaching heights of 30 to 35 meters and diameters of up to 80 to 90 cm. Young branches are hairless. The leaves are broadly egg-shaped, measuring about 10 to 12 by 7 to 10 cm, with entire margins and 5 to 7 pairs of lateral veins, including 3 basal veins; leaf stalks are 3 to 5 cm long. The flowers are unisexual. Male flowers have a diameter of 1.5 cm. The calyx is bell-shaped, deeply 5-lobed at the apex, and 1.5 cm long. The petals number 5 and are 1.3 cm long. There are approximately 25 stamens arranged in 5 bundles; stamen filaments are 1 to 1.3 cm long; anthers are ovoid, 3 mm long. The dry fruit is pentagonal (resembling a loquat fruit), dehiscent, and has a diameter of 1.8 cm.
Properties Nghiến wood is known for its high mechanical strength, hardness, toughness, durability, lack of grain, and resistance to pests and decay; it retains these qualities even when buried underground. In some high mountainous regions (mainly inhabited by ethnic groups like the Tày and Nùng), people use nghiến wood for constructing raised houses, house pillars, floors, beams, rafters, etc. Walking on the floor made of nghiến wood never produces a creaking sound—a characteristic of soft and flexible woods. Additionally, nghiến wood is highly preferred for making cutting boards due to its properties.
The heartwood of nghiến wood is uniformly dark brown with very faint grain lines and a layered structure. Mechanical properties include hardness, strength, and durability. Exposure to rain and wind outdoors may only cause the surface layer to become greyish, akin to the patina on a Japanese katana blade (this is due to the layered structure, a trait found in only certain types of wood).
A disadvantage of nghiến wood is that if thin boards are used for woodworking, they are susceptible to internal stresses caused by moisture and water, which can lead to warping, bending, or even cracking.

Using and Preserving the Excentrodendron Tonkinense Nghiến-Iron Cutting Board Correctly
The Excentrodendron Tonkinense Nghiến-Iron cutting board is an essential tool in every household kitchen. Today, Nghiến-Iron Cutting Board from Northwest Vietnam will share some tips on how to use and maintain your Nghiến-Iron cutting board to ensure its lasting beauty and durability.
What Mistakes to Avoid When Using and Preserving the Excentrodendron Tonkinense Nghiến-Iron Cutting Board? The Nghiến-Iron cutting board is a popular and long-lasting kitchen tool. Because of this, people often pass down "folk wisdom" about its care. They believe these tips have been tried and tested, and will surely lead to success.
The first tip that everyone has heard, and some may have even tried, is soaking the Nghiến-Iron cutting board in saltwater or hot water. In this method, users believe that the board will tighten, increase moisture, kill bacteria, and limit cracking during use. However, it must be clarified that this is a highly harmful misconception.
This misconception arises from the inherent properties of Excentrodendron Tonkinense Nghiến-Iron wood, belonging to the IIA group, which has a tendency to absorb water. Therefore, after soaking in saltwater, steam will rise, causing the surface to dry out. Combined with the hot and dry conditions in Vietnam, the Nghiến-Iron cutting board is more susceptible to cracking, similar to how our skin is more prone to sunburn and dryness after a day at the beach.
How to Properly Use and Preserve the Excentrodendron Tonkinense Nghiến-Iron Wood Cutting Board:
If you've purchased the cutting board but don't plan to use it immediately, keep it wrapped in a plastic bag and seal it tightly.
After unwrapping the board from the nylon bag, immediately apply a layer of rendered lard evenly on both sides and around the edges. When the lard dries, reapply, 3 to 4 times in the first week. It's recommended to apply lard during the board's idle periods, like after lunch or dinner. Also, combine this with regular use during the initial days to avoid cracking.
Avoid direct exposure to wind, sunlight, and hot air. Store it in a well-ventilated area in your home.
After washing with soap, thoroughly clean off any remaining sawdust on the board's surface.
Cut citrus fruits in half, scrub the board's surface along with salt grains to disinfect and remove odors.
Following these steps will help you maintain and enjoy the longevity of your cherished Excentrodendron Tonkinense Nghiến-Iron cutting board.
